Yummy meatballs are skewered and grilled with veggies in these warm and hearty cheese-stuffed sandwiches.
Ingredients
10 prepared Italian meatballs (about 1/2 oz each)
1/2 yellow or red bell pepper, cut into 1-1/2 inch pieces
1/4 small red onion, cut into 1-1/2 inch pieces
2 hoagie or submarine buns, split
1 cup baby spinach
4 slices Sargento® 5 Cheese Italian
Directions
Thread meatballs alternately with peppers and onion onto 2 long metal skewers.
Preheat grill to medium-high heat; grease grate well. Grill skewers, turning occasionally, for 5 to 7 minutes or until meatballs are cooked through and vegetables are softened and lightly charred.
Line bottom of buns with spinach. Transfer meatball and vegetable skewers to buns; slide out metal skewers to remove. Top with cheese slices. Broil for about 1 minute or until cheese melts.
