8 thin slices cantaloupe or honeydew melon, rind removed
2 Tbsp. butter
¼ cup (1 oz.) Sargento® Shredded Reduced Fat 4 Cheese Italian
Directions
In small bowl, combine mayonnaise, 2 tablespoons basil and lemon juice. Stir to combine. Place bread on work surface and spread mayonnaise mixture on bread. Top each slice of bread with one slice Provolone. On four slices of bread, place 3 slices of peppered chicken and two slices of cantaloupe. Sprinkle with remaining basil. Close sandwiches.
Spread butter on the outside of sandwich and sprinkle with shredded cheese. Place sandwich on panini press. Cook 2-4 minutes or until golden brown and crusty. Cut diagonally and serve immediately.
