Make a salad the Mexican way with this recipe. Add cubed deli roast beef on a bed of fresh romaine greens, cherry tomatoes and diced avocado. Top it off with Sargento® Shredded Authentic Mexican Cheese and a creamy, tangy homemade dressing.
1 slice (1/2-inch thick) deli rare roast beef (8 oz.), cut into cubes
2 cups yellow or red cherry tomatoes
1 ripe avocado, peeled, seeded, diced
1/3 cup chipotle or jalapeno salsa
1/4 cup mayonnaise
1/4 cup chopped cilantro
Directions
Combine lettuce, 1-3/4 cups cheese, roast beef, tomatoes and avocado in a very large bowl.
In a small bowl, combine salsa, mayonnaise and cilantro; mix well. Add dressing to salad; toss well and transfer to 4 serving plates. Top with remaining cheese.
