Maui Mahi Mahi

Ingredients
  • 3 Tbsp. olive oil
  • 3 Tbsp. butter
  • 4 (6 oz.) Mahi Mahi fillets
  • 1 cup (4 oz.) Sargento® Shredded Parmesan Cheese
  • 3 Tbsp. flour
  • 2 large eggs, beaten lightly
  • 1/2 cup finely chopped roasted macadamia nuts
  • 1 cup mango salsa, or your favorite fruit salsa
Directions
  1. Preheat oven to 425°F. While oven is heating, melt oil and butter together in baking dish. Remove from oven.
  2. Lightly salt and pepper the Mahi Mahi. Beat eggs in small shallow dish. Mix cheese and flour in separate shallow dish.
  3. Dip each fillet in egg mixture, draining off excess egg. Dredge each fillet in cheese and flour mixture.
  4. Place each fillet in butter/oil mixture in baking dish and turn each piece over to coat the fish, setting pieces slightly apart. Sprinkle macadamia nuts evenly over fish.
  5. Bake, uncovered, until the fish is opaque, 7 to 11 minutes Serve with salsa.
