Make these irresistible bite-sized potato puffs with crumbled bacon and buttery mashed russet potatoes and a generous helping of Sargento® Shredded Mild Cheddar Cheese - Traditional Cut. The mild Cheddar provides just the right amount of cheesiness. These are perfect for your next party or get-together!

Ingredients
  • 4 medium russet potatoes
  • 2 Tbsp. butter
  • 1/4 cup milk
  • 1/4 tsp. salt
  • 1 cup (4 oz.) Sargento® Shredded Mild Cheddar Cheese - Traditional Cut, divided
  • 2 eggs
  • 1/2 tsp. black pepper
  • 1/2 cup crumbled bacon, (6-8 strips), divided
Directions
  1. Peel and boil potatoes approximately 20 minutes or until fork-tender. Drain water. Add butter, milk and salt and mash until smooth.
  2. Preheat oven to 375°F and line a sheet pan with parchment.
  3. Mix 3/4 cup cheese into potato mixture. In small bowl, beat eggs, then stir into potato mixture. Add pepper and 1/4 cup bacon; mix until evenly distributed.
  4. Scoop 1" balls of mixture onto sheet pan. Top with reserved cheese and bacon and bake 15 - 20 minutes or until slightly brown on top. Serve warm.
