Cheddar Apple Crisp Waffles with Cheddar Apple Compote

The flavors of apple crisp, apple cider and Sargento® Cheese combine to create these savory sweet waffles. Fall never tasted so good.

Ingredients
  • 2 cups Pancake and baking mix
  • 1/4 cup Fresh apple cider
  • 1 cup Milk
  • 2 Tbsp Vegetable oil
  • 1 Lg Egg
  • 1/2 cup Chopped pecans
  • 1/2 tsp Pumpkin pie spice
  • 1/4 cup Rolled oats
  • 1 cup Sargento® Shredded Sharp Cheddar Cheese - Traditional Cut
  • CHEDDAR APPLE COMPOTE
  • 2 Lg Granny smith apples, peeled, cored and chopped
  • 5 Tbsp Unsalted butter, divided
  • 1/2 tsp Ground cinnamon
  • 1/4 cup Prepared caramel sauce
  • 1/4 cup Fresh apple cider
  • 1/2 cup Sargento® Shredded Sharp Cheddar Cheese - Traditional Cut
  • 1/4 tsp Kosher Salt
Directions
  1. FOR BATTER: In a medium bowl, combine baking mix, half of the apple cider and next 4 ingredients until slightly lumpy. Set aside. Plug in waffle iron and turn to high if it allows.
  2. FOR CHEDDAR APPLE COMPOTE: Melt 2 Tbsp butter In a medium skillet over medium heat. Add apples and cinnamon. Cook for 4-5 minutes or until crisp tender. Stir in caramel sauce and apple cider until sauce is smooth. Stir in 1/4 cup of cheese until completely melted. Remove pan from heat and stir in remaining butter one tablespoon at a time until completely melted into sauce. Set compote mixture aside until ready to serve.
  3. TO MAKE WAFFLES: Open hot waffle iron and spray both sides with non-stick spray. Sprinkle about 1 tablespoon of oats onto bottom. Sprinkle 2 Tbsp of cheddar over oats, then quickly pour in about 2/3 cup of waffle batter or enough to fill 3/4 of the bottom of the iron. Close lid and cook for 3-4 minutes or until golden brown. Remove waffle from iron and keep warm while making remaining waffles. Close lid until iron is ready again, then repeat process with remaining oats, cheese and waffle batter.
  4. TO SERVE: Cut waffles into quarters, then layer 3-4 waffles with about 3/4 cup of apple mixture. Sprinkle with remaining cheese if desired and serve.
