Ingredients
  • 1-1/2 pounds lean ground beef
  • 2 Tbsp. chopped onions
  • 1/4 cup minced green peppers
  • 1 can (14.5 oz.) stewed tomatoes or diced tomatoes
  • 1 can (8 oz.) tomato sauce
  • 1 to 2 teaspoons chili powder
  • 12 (7-inch) soft corn tortillas
  • 4 cups (16 oz.) Sargento® Shredded 4 Cheese Mexican - Traditional Cut
  • Sour cream, optional
  • Guacomole, optional
Directions
  1. In large skillet, brown meat, onions and peppers; drain. Return to pan. Add tomatoes, sauce and chili powder. Simmer 15 minutes, stirring often. Put 1/2 cup meat mixture in the bottom of a 9x13-inch baking dish; top with 2 tortillas placed side by side. Spread with 1/2 cup meat and top with 2/3 cup cheese; repeat layers ending with meat and cheese. Bake at 350°F 30 minutes. Cut each stack into 4 wedges. May be served with sour cream and/or guacamole.
