These wraps are filled with a garden-fresh array of veggies and chicken tossed in a zesty lime mayonnaise. Enjoy them on-the-go or anytime you’re looking for an interesting new take on chicken salad.
Ingredients
1/3 cup mayonnaise
2 tsp Dijon mustard
1 tsp fresh lime zest
2 tsp fresh lime juice
1/4 tsp each salt and pepper
1-1/4 cups chopped cooked chicken
1 green onion, thinly sliced
1/3 cup diced English cucumber
1/3 cup diced celery
1/3 cup diced radish
1/4 cup cooked corn kernels
4 slices Sargento® Colby-Jack
1 cup loosely packed baby spinach leaves
4 wheat tortillas (6 inch), warmed
Directions
In bowl, stir together mayonnaise, Dijon mustard, lime zest, lime juice, salt and pepper; fold in chicken, green onion, cucumber, celery, radish and corn kernels.
Arrange cheese and spinach evenly over tortillas. Top with chicken salad; roll up to enclose filling.
