Ingredients
  • 1/3 cup mayonnaise
  • 2 tsp Dijon mustard
  • 1 tsp fresh lime zest
  • 2 tsp fresh lime juice
  • 1/4 tsp each salt and pepper
  • 1-1/4 cups chopped cooked chicken
  • 1 green onion, thinly sliced
  • 1/3 cup diced English cucumber
  • 1/3 cup diced celery
  • 1/3 cup diced radish
  • 1/4 cup cooked corn kernels
  • 4 slices Sargento® Colby-Jack
  • 1 cup loosely packed baby spinach leaves
  • 4 wheat tortillas (6 inch), warmed
Directions
  1. In bowl, stir together mayonnaise, Dijon mustard, lime zest, lime juice, salt and pepper; fold in chicken, green onion, cucumber, celery, radish and corn kernels.
  2. Arrange cheese and spinach evenly over tortillas. Top with chicken salad; roll up to enclose filling.
