Ingredients
- 1/3 cup mayonnaise
- 2 tsp Dijon mustard
- 1 tsp fresh lime zest
- 2 tsp fresh lime juice
- 1/4 tsp each salt and pepper
- 1-1/4 cups chopped cooked chicken
- 1 green onion, thinly sliced
- 1/3 cup diced English cucumber
- 1/3 cup diced celery
- 1/3 cup diced radish
- 1/4 cup cooked corn kernels
- 4 slices Sargento® Colby-Jack
- 1 cup loosely packed baby spinach leaves
- 4 wheat tortillas (6 inch), warmed
Directions
- In bowl, stir together mayonnaise, Dijon mustard, lime zest, lime juice, salt and pepper; fold in chicken, green onion, cucumber, celery, radish and corn kernels.
- Arrange cheese and spinach evenly over tortillas. Top with chicken salad; roll up to enclose filling.
