This chowder combines hearty textures and flavors from ingredients like chunks of sweet potato simmered in a chicken broth along with ham, sour cream and onions sautéed in a garlicky butter mixture. Sargento® Shredded Reduced Fat Sharp Cheddar Cheese is this dish's perfect topping.

Ingredients
  • 1 Tbsp. olive oil or butter
  • 1 medium onion, chopped
  • 1 tsp. ground coriander or cumin
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes (1 lb.), peeled, cut into 1-inch chunks
  • 3 cups reduced sodium chicken broth, divided
  • 1 cup diced (1/4-in.) cooked ham
  • 1/2 cup reduced fat sour cream
  • 1 cup (4 oz.) Sargento® Shredded Reduced Fat Sharp Cheddar Cheese
Directions
  1. Heat oil in a large saucepan over medium heat. Add onion; sauté 5 minutes. Add coriander and garlic; sauté 2 minutes. Add sweet potatoes and 2 cups of the broth; bring to a boil over high heat. Reduce heat; cover and simmer 20 minutes or until sweet potatoes are very tender.
  2. Ladle half of mixture into a food processor; add 1/2 cup of the remaining broth. Cover; process until pureed. Repeat with remaining sweet potato mixture and 1/2 cup broth. Return soup to same saucepan with ham; taste and season with salt if desired. Cook over medium heat until heated through.
  3. Ladle soup into shallow bowls; top with sour cream and cheese.
