1 can (14-1/2 oz.) Cajun style stewed tomatoes, undrained
1 cup (4 oz.) Sargento® Shredded Reduced Fat 4 Cheese Italian or Sargento® Shredded Parmesan Cheese
1/4 cup chopped parsley
Directions
Cook rice according to package directions.
Generously coat a large saucepan with cooking spray; add onion. cook over medium-high heat 4 minutes or until softened, stirring frequently. Add bell pepper and garlic; cook 3 minutes, stirring occasionally. Sprinkle seasonings over vegetables; mix well. Stir in sausage; cook 1 minute. Add tomatoes; cover and simmer 10 minutes.
Spoon cooked rice onto four serving plates; top with sausage mixture. Sprinkle with cheese and parsley.
