Leftover cooked chicken and Sargento® Gouda Cheese combine with the fresh flavors of fennel slaw for the perfect sandwich.
Ingredients
2 tbsp. mayonnaise
2 tsp. extra-virgin olive oil
2 tsp. lemon juice
1/4 tsp. lemon zest
Pinch each salt and pepper
1 cup thinly sliced fennel
1/3 cup thinly sliced red onion
1 tbsp. Dijon mustard
2 ciabatta buns, halved
8 oz. cooked leftover chicken, sliced
2 slices Sargento® Sliced Gouda Cheese
Directions
Whisk together mayonnaise, olive oil, lemon juice, lemon zest, salt and pepper. Toss with fennel and red onion.
Spread mustard evenly over bottom halves of ciabatta buns. Top with chicken, cheese slice and fennel slaw. Cap with tops of buns. Tip: This sandwich is also delicious on whole grain or white buns.
