These super simple breakfast sandwiches make it easier to get a healthy start on the day. You can substitute deli ham or turkey for the canadian bacon, or eliminate the meat altogether.
In a small bowl, combine egg whites, and next 4 ingredients.
Grease 4 large custard cups or ramekins with non-stick spray. Divide egg white mixture into custard cups. Cover with plastic wrap. Microwave on high for 3-4 minutes or until egg is almost completely cooked. Let rest in microwave for 2 minutes.
Brown canadian bacon in a non-stick skillet for 30-45 seconds per side over medium heat.
To Assemble: Place one piece of canadian bacon on the bottom of each english muffin bottom. Top with one egg white patty, then a slice of cheese. Finish with muffin tops. Serve with fruit.
