A side dish like this is perfect for any kind of main course. It’s backing nutrient-rich ingredients like sautéed kale and sliced red apple for a rich and sweet flavor. Combine with applewood-smoked bacon strips and crown with a helping of Sargento® Shredded 4 State Cheddar® Cheese that melts perfectly on top.

Ingredients
  • 2 strips thick sliced applewood smoked bacon, cut crosswise into thin strips
  • 2 shallots, thinly sliced
  • 1 large bunch kale (about 1 pound)
  • 1/4 tsp. each: salt and freshly ground black pepper
  • 1 red apple, unpeeled, cut into 1/4-inch pieces
  • 1 cup (4 oz.) Sargento® Shredded 4 State Cheddar® Cheese
Directions
  1. Cook and stir bacon in large deep skillet with lid over medium heat until crisp, 3 to 4 minutes. Use slotted spoon to transfer bacon to paper towel to drain. Add shallots to drippings in pan; cook and stir 3 minutes.
  2. Wash kale, but do not dry. Discard tough stems; coarsely chop leaves. Add half of kale to skillet with shallots. Cover; cook 2 minutes or until wilted. Stir in remaining kale, salt and pepper; cover and cook 2 minutes or until wilted. Uncover; stir in apple and cook 2 to 3 minutes or until kale is tender and apple is heated through. Remove skillet from heat; stir in cheese and reserved bacon. Serve immediately.
